Mortadella is produced in Bologna in compliance with the traditional recipe in compliance with the I.G.P, having selected pure pork meat, shoulder and lean meat with classic lard. Limited salt intake. It does not contain added polyphosphates, fat emulsions, caseinates and its derivatives, glutamates and are free from GMO materials. It is suitable for consumption by subjects with gluten intolerance, present in the AIC protector since the 2008 edition.
