They are rigorously select national pigs for the production of seasoned salami such as; Sausages, Capocolli, Soppressata, Pancetta, Lonza, and finally the uniqueness of the salami with Almonds and Pistachio. The meats have documents and a certificate of recognition of the CE stamp.
It has a pleasant and delicate flavor. Obtained from pork loin, it is trimmed and after about eight days of dry salting, it is wrapped in a natural casing and tied, ready for aging which varies from about 80/90 days.
