The olives are picked and selected by hand. The olives are marinated with extra virgin olive oil, red wine vinegar, rosemary and bay leaf. Deamarization takes place according to the “Greek” method, that is based on water and in this case rain and sea salt.
Wherever you look in Crete, you will see an olive tree. There are many, but not all are equal. Small black and green olives are another type of Cretan olives.
