Now recover the dough and transfer it to a pastry board, where it will be left to rest for 45 minutes. Finally, take a panettone cup and place the dough in it, leaving it to rise for about 3 hours. At this point you are ready to cook in an oven preheated to 160 degrees for 45 minutes.

If you are interested in preparing an artisanal panettone with pistachios with sourdough to replace fresh brewer’s yeast, insert 70 g of yeast into the recipe, making sure that it has been renewed at least three consecutive times before it is kneaded.

The recipe for the pistachio glaze for panettone.

As ingredients you need 80 grams of pistachio spread, 80 ml of liquid cream and 300 grams of white chocolate. Start breaking up this last ingredient, then melt it in a bain-marie, then add the cream and pistachio cream. Now stir vigorously, until the pistachio glaze is green and homogeneous. Finally, pour the pistachio glaze obtained into a bowl and continue stirring until it becomes warmer.
